Chicken Curry with Wholegrain Rice for Picky Eaters!


Well hello there and Welcome to my blog. ;) On the Menu today is Chicken Curry with Wholegrain Rice, one of my Family's favorite dish. As today is more of a rainy and cold day here in Ireland, I thought a good Meal to warm us all up would be the Curry. It just warms you right up.
It's funny that my Son likes Chicken Curry as he usually doesn't like "real Chicken" (his words, as Chicken Nuggets are made from different Chicken :D) but the first time he tried it he loved it. (Just a little side note: My Son has ASD and Sensory Processing Disorder)
I found this recipe from a fellow blogger (Familyfoodonthetable.com) and just changed a few bits to make it fitting to our family, as they hate any kind of vegetables (that they can see anyway ;) )
First I cut and cooked the chicken, with a little help from my youngest. He just loves helping, it's great; sometimes exhausting though :D especially when the food is more outside of the pot than inside but I encourage him to help as I realized I made this mistake with my first and he refuses to help now. After the chicken is done, I took it out of the pot and started with the sauce. Now I didn't put onions in as my Fiance hates onions. I have tried every way to sneak them in. But he ALWAYS knows!!
So I cut the garlic and fried it with bit of coconut oil in the pot. Make sure you keep the temperature medium to low to really infuse the taste of the garlic. I learned the hard way how bad it tastes when you burn the garlic. Then I threw in the rest of the liquid ingredients with the Spices and let it cook for a bit on medium. During this time I've been cooking the rice too. You can also make potatoes with the Curry if you'd like or in Ireland they love French Fries with the Curry not so much my taste but to each their own.
After about 15 minutes of it cooking, I had to thicken my sauce as it was very watery but I fixed that really quick. Then I added some spinach, tasted it and after I blended it with my Hand-blender, I served it to my hungry hippos. :D It was immediately devoured with a mmh..mmmh...mmmh. :D So with further ado. Here is the Recipe and I hope it is just as loved by your family as it was by mine:

Chicken Curry for Picky Eaters

Yield: 4 People
Prep Time: 5 Minutes Cook Time: 15 Minutes
Ingredients:
  • 2 teaspoons Coconut Oil
  • 2-3 Chicken Breast (depending on size)
  • 3 cloves garlic, minced
  • 4 teaspoons curry powder, medium
  • 1 14.5 oz. can diced tomatoes, drained
  • 3/4 Cup non-fat Greek Yogurt
  • 1/2 Cup Milk, whole or skim
  • salt
  • pepper
  • 1 teaspoon of Garam Masala
  • 2 handfuls of spinach leaves
  • fresh parsley
  • optional: 1/8 teaspoon of cayenne pepper
Instructions:
  1. Heat Coconut Oil in Pan or skillet over medium heat.
  2. Add the diced chicken breast to the skillet and cook until through, then set to the side.
  3. Add garlic to skillet and saute for 1 minute.
  4. Stir in the tomatoes, Greek Yogurt, Milk and Curry Powder (make sure to have on low temperature so the milk doesn't curdle) ;also add the Cayenne Pepper here if you decide to use it.
  5. Instead of Onions, I added 1 teaspoon of Onion Powder here.
  6. Bring to a low simmer and cook for 5 Minutes or until thickened.
  7. Add the handfuls of spinach and simmer until they are soft.
  8. Blend everything together with a hand-blender or if you have anything else to blend it with you can use that too. (My Family and I'm guessing every picky eater doesn't like spinach in their food so its best to make it "vanish")
  9. Now stir in Chicken until warmed through, for about 1 to 2 Minutes
  10. Serve hot with Rice and some Parsley or Cilantro.
  11. Enjoy!
